在夏天等待食品降溫要費時很久,客戶以放流水式或加冰塊與電風扇降溫,當他覺得桶子外部已經冷了,所以放入冰箱,隔天取出時發現桶子中心食品有一圈圈突起狀與冒泡,結果食品壞掉讓他損失不少,後來這位客戶與我們接洽後;才知道原來是中心溫度未帶出來而導致食品腐敗,我們實際量測溫度後中心與料槽週邊溫差達25度以上,相信這樣結果大家很驚訝,就好像沒有人會容許加熱時溫度差25度的情況還將商品拿來販賣。所以當你很注意醬汁的美味同時別忘了還有冷卻這重要關鍵點
It takes very long for the food and beverages to cool down in summer. A client tried to cool the food with running water, ice cubes and fans. He put it into the refrigerator when the sides of the pail were cold only to find bubbles and a wave-like uneven surface at the center of the pail the day afterwards. He lost a great portion of the food. He contacted us after that and he got to know the food was spoiled because the center had not been cooled down. We measured the temperature at the side and the center of the pail and found a difference in temperature of over 25℃. I think this is surprising for a lot of people. Nobody will sell food that is undercooked by 25℃. If you care for the taste of the sauce, you will have to pay attention to cooling.
